LOS LUNAS, N.M. - Do you love the traditional New Mexico cuisine, but want to eat healthy? New Mexico State University's Valencia County Extension office is offering a cooking class that will demonstrate and provide healthy recipes for those much-loved dishes.
"Some of the traditional recipes have been altered to reduce the amount of sugar, fat and salt that go into traditional New Mexico cuisine, while still maintaining great tasting meals," said Laura Bittner, Extension home economist.
Participants will prepare a selection of dishes from healthy New Mexico cuisine recipes. The workshop will conclude with a tasty meal of the prepared dishes. Participants will receive recipes for chile relleno casserole, pozole, stove top red chile enchiladas, green chile potato stew, chile chicken, calabacitas, quelites, flour tortillas and sopa.
The class will be from 9 a.m. to 12:30 p.m. Wednesday, Nov. 9 at the Peralta Memorial United Methodist Church, 25 Wesley Road in Peralta. Participation fee is $5. To reserve your seat preregister by Friday, Nov. 4, by calling Dorothy at 505-565-3002.
