NMSU to host certification course for food service industry professionals

New Mexico State University will host a three-day training and certification course designed for food and beverage industry professionals.

The course, “FSPCA – Preventive Controls for Human Food Full Course for Preventive Controls Qualified Individual,” will take place from 7:30 a.m.-5 p.m. Feb. 7 and 8, and 7:30 a.m.- noon Feb. 9, at the Dońa Ana Community College Workforce Development and Career Readiness center, 2345 E. Nevada Ave. Out-of-state registration fee is $500, and the registration fee for in-state is $200. Cost includes refreshments, lunch, a manual with materials, and an Association of Food and Drug Officials certificate.

The program was developed by the Food Safety Preventative Controls Alliance for the food and beverage industry, which is mandated to comply with FDA Food Safety Modernization Act training requirements for food handling and production.

Training objectives are for the food safety professional who must have skills in efficient management of a FSMA Food Safety Plan and Good Manufacturing practices; conducting a risk assessment to determine controls for process, food allergen, sanitation and supply chain procedures in the food process environment; and implementing the requirements for verification, validation and record keeping.

Course instructors are Nancy Flores, assistant professor and Food Technology Extension Specialist at NMSU, and Mauricio Castelo. Both instructors have experience and knowledge in educating food entrepreneurs and food companies as part of NMSU’s land-grant mission.
