NMSU to host certification course for food processing professionals

Two New Mexico State University professors will host a two-day certification course designed for managers and supervisors of food processing operations around the region.

The course, “Better Process Control School for Acidified Foods Only,” will take place from 7:30 a.m.-5:30 p.m. Nov. 13, and 7:30 a.m.-6:30 p.m. Nov. 14, at NMSU’s Gerald Thomas Hall Room 303. The course satisfies the training requirement specified in both FDA and USDA regulations for Acidified Foods Only, and is designed to provide information on critical issues that affect acidified foods production.

The Better Process Control Schools certify supervisors of thermal processing systems, acidification and container closure evaluation programs for low-acid and acidified canned foods. Each processor of low-acid or acidified foods must operate with a certified supervisor on hand at all times during processing.

Registration cost is $400 a person if received before Nov. 2, and $450 after Nov. 2. Fee includes textbook, instruction and testing. Lodging, meals and travel are not provided.

Course instructors are Nancy Flores, assistant professor and Food Technology Extension Specialist at NMSU, and Efren Delgado, NMSU professor of biochemical engineering. Both instructors have vast experience and knowledge of food regulations, processing and safety, and are recognized processing authorities who educate and assist food entrepreneurs and food companies as part of NMSU’s land-grant mission.
